Lemon Slice Cheesecake

A simple cheesecake idea that can be served individually.
Serves 6
What you need:
- 1 Box Mr Kipling Lemon Slices Snap Pack format
- 2 tbsp mascarpone cheese
- 1 tbsp lemon curd
- a handful of blueberries, sliced
via Asda, Sainsbury's,
Tesco and Ocado
How to make it:
- Cut the Mr Kipling Lemon Slices in half lengthways.
- In a bowl, mix together the mascarpone cheese and lemon curd.
- Spoon a little of the mascarpone mixture onto the bottom slice of each cake.
- Add a couple of sliced blueberries and top with the other slice of cake.
Hints and tips:
- Raspberries will also work well in this recipe.
