Chargrilled Italian Soup

Simmer Loyd Grossman Chargrilled Vegetable Sauce with some vegetable stock and cannellini beans to create a wholesome Italian soup.
Serves 2
What you need
- 1 Jar Loyd Grossman Tomato & Chargrilled Vegetable Sauce
- 300ml vegetable stock
- ½ can drained cannellini beans
- 2 rashers chopped streaky bacon
- handful of flat leaf parsley, finely chopped
- saucepan
- small non-stick frying pan
How to make it
- Pour the sauce and vegetable stock into a saucepan and mix well.
- Add the cannellini beans, bring to the boil then reduce heat to cook on a low simmer for 4-5 minutes.
- In another pan, fry the bacon pieces until lightly crisped.
- Before serving the soup, top with the bacon pieces and flat leaf parsley.
Hints and tips
- Serve this delicious Italian soup with a warm crusty ciabatta roll for a satisfying lunch or supper idea.
- Use up any left over bread to make croutons to garnish your soup, just cut the bread into cubes and fry lightly in olive oil.
