Mandarin Cheesecake

Divide crushed biscuits between 4 glasses. Whisk together low fat soft cheese and Ambrosia Low Fat Custard, add in the zest and juice of 1/2 an orange and spoon over the biscuit base. Arrange mandarins over the top and chill before serving.

What you need
- 8 digestive biscuits, crushed
- 200g low fat soft cheese
- 500g Ambrosia Low Fat Custard
- 1/2 orange, zest and juice
- 1 small can mandarins, drained
- 4 glasses
How to make it
- Divide the crushed biscuits between the glasses and shake gently to level them.
- In a bowl whisk together the soft cheese and Ambrosia Low Fat Custard, add the orange zest and juice and stir gently.
- Carefully spoon the custard mixture over the biscuit crumb and decorate with the mandarin segments.
- Chill for an hour in the fridge before serving.
Hints and tips
- For variety try this recipe with chocolate digestive biscuts or gingernuts.
- Other fruits such as apricots or peach also work very well in this recipe.
