How-to Video

Divide crushed biscuits between 4 glasses. Whisk together low fat soft cheese and Ambrosia Low Fat Custard, add in the zest and juice of 1/2 an orange and spoon over the biscuit base. Arrange mandarins over the top and chill before serving.

Serves 4

What you need

  • 8 digestive biscuits, crushed
  • 200g low fat soft cheese
  • 500g Ambrosia Low Fat Custard
  • 1/2 orange, zest and juice
  • 1 small can mandarins, drained
  • 4 glasses

How to make it

  1. Divide the crushed biscuits between the glasses and shake gently to level them.
  2. In a bowl whisk together the soft cheese and Ambrosia Low Fat Custard, add the orange zest and juice and stir gently.
  3. Carefully spoon the custard mixture over the biscuit crumb and decorate with the mandarin segments.
  4. Chill for an hour in the fridge before serving.

Hints and tips

  • For variety try this recipe with chocolate digestive biscuts or gingernuts.
  • Other fruits such as apricots or peach also work very well in this recipe.

  • Eton Mess, very nice. One of my favorite deserts. But i found that i liked it better with broken meringues instead of Viennese Whirls.
