For an easy Mediterranean style ratatouille pour Homepride Herby Tomato Vegetable Bake over some roasted aubergine, red pepper, onion and courgette topped with crispy breadcrumbs and baked in the oven.

Serves 4

What you need

  • 1 aubergine, roughly diced
  • 1 red pepper, diced
  • 1 onion, chopped
  • 1 courgette, roughly diced
  • 1 tbsp olive oil
  • 1 jar Homepride Herby Tomato Vegetable Bake
  • 100g breadcrumbs
  • 70g grated cheese
  • ovenproof dish

How to make it

  1. Place the aubergine, red pepper, onion and courgette into an ovenproof dish and toss lightly in the olive oil.
  2. Bake in a preheated oven 200ºC ,Fan 180ºC, Gas Mark 6 for 25 minutes or until vegetables are tender.
  3. Pour over a jar of Homepride Herby Tomato Vegetable Bake Sauce and top with breadcrumbs and grated cheese
  4. Bake for 10-15 minutes until the sauce is cooked through and the topping is crisp and golden.

Hints and tips

  • Instead of aubergine try adding some baby vine tomatoes and just before serving sprinkle over some toasted pine nuts.
  • For a Mediterranean style topping use grated mozzarella cheese instead of cheddar cheese.
