Tandoori Chicken Pilaff

This coconut fragranced Persian chicken curry very easy to makebut gives fantastic results. Just mix together in a large pan some roasted cumin seeds, coconut milk, Chicken Oxo, chicken, basmati rice, spinach, fresh coriander and cashew nuts.
Serves 4
What you need
- 1 tsp of cumin seeds
- 400g can of coconut milk
- 1 Oxo Chicken Cube
- 400g of cooked tandoori or tikka mini chicken fillets, cut into bite sized pieces
- 400g of pre-cooked basmati rice
- 225g ready-washed baby spinach
- Small bunch fresh coriander
- a large handful of cashew nuts
- puppadums and cucumber raita to serve
- large deep pan
How to make it
- Heat a large deep pan and dry roast the cumin seeds for 30 seconds.
- Add the coconut milk and crumbled Oxo Cube and stir until dissolved.
- Then add the chicken and stir-fry over a medium heat for 2 minutes.
- Add the rice to the chicken mix, stirring to break up any lumps then pile the spinach on top and add 3 tsp of water.
- Cover and cook for 3-4 minutes until the spinach starts to wilt.
- Tear the coriander and roughly chop the nuts, then stir them into the rice mixture and serve with puppadums and cucumber raita.
Hints and tips
- Try using some cooked prawns marinated in Tikka paste for a change.
