Paxo Apple Veggie Stuffing Balls

Mix together 2 packets of Paxo stuffing mix, add some freshly crushed garlic and onions, a grated apple and some wholemeal breadcrumbs. Bind the mixture together with some beaten egg and then shape into 12 stuffing balls. Place into a hot bun tray and bake until crispy.
Serves 6
What you need
- 2 packets of Paxo Stuffing, made up as directed on the pack
- 2 cloves of garlic, crushed
- 1 large onion, finely chopped
- 1 large cooking apple, peeled and grated
- 2 crusts of wholemeal brown bread
- 1 egg, beaten
- 3 tbsp of olive oil
- food processor
- 12 hole bun tray
How to make it
- Preheat the oven to 400ºC/ 200ºF/ Gas mark 6
- Place Paxo stuffing mix in a large mixing bowl and add the garlic, onion and grated apple.
- To make the bread crumbs tear the bread into pieces and place into a food processor and whizz on a medium speed until breadcrumbs form.
- Add the breadcrumbs to the Paxo mixture and then bind the mixture together with beaten egg.
- Lightly oil a 12 bun tray with olive oil and using lightly oiled hands roll the mixture into 12 equal shaped balls which should fit snugly into the tray. Bake for 20 minutes until golden and crispy.
Hints and tips
- For a quick an easier alternative spread the mixture into a baking tray and cook as a tray bake and then serve in slices.
- Try using a jar of apple or cranberry sauce as a tasty alternative.
