For a quick and tasty supper dish try preparing some mouth watering chilli stuffed peppers. Just stuff some peppers with a mixture of Homepride minced beef chilli mixed with cooked rice and topped with grated cheese.

Serves 4

What you need

  • 1 tablespoon olive oil
  • 300g lean minced beef
  • Jar Homepride Chilli Cook-In Sauce
  • 150g wholegrain boil in the bag rice, cooked as instructed on the packet
  • 4 red peppers, deseeded and cut in half
  • 150g grated cheddar cheese
  • non-stick pan
  • greased ovenproof dish

How to make it

  1. Heat the olive oil in a non-stick pan and sauté the mince until browned.
  2. Add the Homepride Chilli Cook-In Sauce, stir well and simmer gently for 25 minutes or until the mince is cooked.
  3. Add the cooked rice to the chilli then fill each pepper with the chilli mixture and place in the ovenproof dish.
  4. Sprinkle some grated cheese over each pepper and then bake in a preheated oven 190ºC / Gas Mark 5 for 30 – 35 minutes or until the peppers are tender.

Hints and tips

  • You can use any colour peppers when making this dish.
  • For appetizing change top the peppers with some wholemeal breadcrumbs.
