Mini Apricot Meringue Pies

Take apricot tarts and top with meringue, heat under hot oven and serve warm with extra thick double cream
Serves 6
What you need:
- 3 egg whites
- 6oz caster sugar
via Asda, Sainsbury's,
Tesco and Ocado
How to make it:
- Beat egg whites until stiff them gradually add sugar and beat til glossy.
- Put into hot oven until meringue starts to brown

- Works with any jam tart of your choice
