A refreshing Summertime sweet with Hartley’s Lime Jelly, sliced lemon and lime and mint leaves served on a crushed biscuit base. Looks and tastes refreshingly good.
Serves 4
What you need
- 1 Hartley’s Lime Jelly Tablet or Sugar Free
- 1 lemon and 2 limes, peeled, pith removed and cut into thin slices
- bunch of mint leaves
- 4 digestive biscuits, crushed
- 4 tbsp fromage fraîche
- 4 tall stemmed glasses
How to make it
- Make up a Hartley’s Lime Jelly as directed on the pack, add sliced lemon and lime plus several mint leaves, cool then leave in the fridge to set.
- Place some crushed digestive biscuits into the bottom of 4 tall dessert glasses.
- To assemble the dessert place a portion of jelly into each glass then top with a spoonful of fromage fraîche and decorate with sprigs of mint.
Hints and tips
- Citrus fruits do sometimes affect the setting quality of jelly so if preferred add the fruit separately rather than mixing it with the jelly.
