Warm Courgette Medley

For a tasty and quick supper dish heat a pan with a dash of olive oil and fry some chopped onions and diced bacon for 5 minutes. Add some diced courgettes a handful of sweetcorn, peas and kidney beans then crumble over a vegetable Oxo cube. Stir-fry until the vegetables are soft and then serve hot with crusty bread.
Serves 4
What you need
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 large courgettes, washed and diced
- 1 small can sweetcorn, drained
- 1 small can garden peas, drained
- 1 small can kidney beans, rinsed and drained
- 1 Oxo Cube Vegetable
- non-stick frying pan
How to make it
- Heat a large non-stick frying pan and add the olive oil then fry the chopped onions and diced bacon for 5 minutes.
- Add the courgettes, sweetcorn, peas and kidney beans then crumble over a vegetable Oxo cube and stir-fry for about 10 minutes until the vegetables are soft.
- Serve with chunks of crusty bread.
Hints and tips
- For a vegetarian alternative remove the bacon and add sliced Quorn Frankfurters.
- For a more substantial evening meal serve the Summer Courgettes with some steamed rice or cous cous.
