Crumble Topped Butterfly Chicken

For an mouth-watering supper idea take two chicken breasts and cut them down the centre then top with Branston Relish Tomato & Red Pepper, grated cheese and a delicious crumble topping made from crushed bacon rasher crisps and breadcrumbs. Finish off with another sprinkling of grated cheese and bake in the oven for 25 minutes.
Serves 2
What you need
- 2 Chicken Breasts
- Branston Relish Tomato & Red Pepper
- 100g mild or mature cheddar cheese, grated
- 1 pkt bacon rasher crisps, crushed or dried bacon bits
- 75g fresh breadcrumbs
- ovenproof dish, lightly greased
How to make it
- Slice Chicken breasts horizontally through the middle, fold out flat then place in a greased shallow ovenproof dish.
- Score the chicken with a sharp knife and rub in some salt and pepper to season.
- Squeeze some Branston Relish over the top of the chicken and smooth over evenly with knife then sprinkle over half of the grated cheese.
- To make the crumble, mix together the crushed crisps and breadcrumbs and sprinkle over the chicken then add the remainder of the cheese. Bake in a moderate oven 190ºC/375ºF/Gas 5 for 25 minutes or until the chicken is thoroughly cooked.
Hints and tips
- Serve with herby new potatoes, potato wedges, or buttery mash and seasonal green vegetables.
