For deliciously simple adult treat bring some Ambrosia Original Devon Custard to the boil in a saucepan and pour over some sliced bananas that have been soaked in brandy and placed in ramekin dishes, allow to cool and the pop into the fridge. Once chilled, completely cover the top with caster sugar, place under a hot grill to caramelise and serve.

Serves 4

What you need

  • 2 large bananas
  • ½ orange, juice and zest reserved
  • 4 tbsp brandy or orange liqueur
  • 500g carton of Ambrosia Original Devon Custard
  • 4 teaspoons of sugar
  • saucepan
  • 4 ramekin dishes

How to make it

  1. Peel and slice the bananas and place in a bowl with juice from half an orange and 4 tsps of brandy or orange liqueur and leave to soak for 5 minutes.
  2. Meanwhile pour the Ambrosia Custard into a saucepan and heat gently for 5 minutes or until the custard is hot. Whilst the custard is simmering add the remaining alcohol and ¾ of the orange zest.
  3. Divide the ‘drunken’ banana slices and place in the bottom of the ramekin dishes then pour the warmed custard evenly over the bananas, leave to cool and then transfer to the fridge for an hour until the custard is chilled.
  4. When ready to serve sprinkle a teaspoon of caster sugar over the top of the custard and place the dishes under a hot grill for a minute or until a crunchy caramel is produced
  5. To serve decorate each ramekin with the remaining orange zest and serve hot.

Hints and tips

  • For a delicious alternative try using canned pineapples, lime juice and zest and a dash of Malibu then replace the sugar with coconut for a truly tropical twist!
  • Substitute the caster sugar with demerara sugar for a really crunchy topping.
