Try making this quick and easy cheesecake by mixing crushed digestive biscuits with melted butter and place in a springform tin to make the cheesecake base. Chill the base in fridge then add a layer of Angel Delight and return to the fridge for a further 30 minutes. Finally just before serving decorate with some whipped cream and chocolate buttons.

Serves 6

What you need

  • 150g digestive biscuits, crushed
  • 75g butter, melted
  • 1 sachet of Angel Delight, any flavour
  • 300ml cold milk
  • whipped cream for decoration
  • 1 small packet of chocolate buttons for decoration
  • 23cm springform tin

How to make it

  1. For the biscuit base mix together the biscuits and melted butter and press gently into the bottom of a 23cm springform tin. Transfer to the fridge and chill for 15 minutes.
  2. Meanwhile make up the Angel Delight with cold milk as directed on the pack.
  3. Pour the Angel Delight over the biscuit base and then return to the fridge and chill for at least 30 minutes until the topping firms up.
  4. To serve remove from the tin and place on a serving plate. Decorate with whipped cream and chocolate buttons.

Hints and tips

  • A crushed ginger biscuits base and Butterscotch Angel delight produces a really delicious dessert.
  • For a healthier alternative decorate the cheesecake with reduced fat crème fraîche and fresh fruits.
