For a fabulous starter or side dish whisk together an egg white, a dash of oil and a crumbled Vegetable Oxo Cube, add some potato peelings then mix together and place in a roasting tin and bake till golden and crispy.

Serves 3

What you need

  • 1 egg white
  • 1tsp olive oil
  • 1 Oxo Cube Vegetable
  • 250g potato peelings cut quite thickly
  • roasting tin

How to make it

  1. Preheat the oven to 400ºC/ 200ºF/ Gas mark 6
  2. In a large bowl whisk together an egg white, a dash of oil and a crumbled Vegetable Oxo Cube
  3. Add the potato peelings then mix together until the skins are thoroughly coated in the egg white mixture then place in a roasting tin.
  4. Bake in a preheated oven for 25-30 minutes or until the skins are crispy.

Hints and tips

  • Serve hot as a starter with a selection of dips such as garlic and herb or tomato and chilli salsa.

  • The recipe states rice pudding truffles, but in the how to make instructions, you say custard...... is it best to use rice pud or custard?
