For a fabulous family meal pour Batchelors Low Fat Mushroom Condensed Soup over diced red pepper, red onion, courgette and butternut squash, cover with breadcrumbs and cheese then bake in the oven.

Serves 4

What you need

  • 1 red pepper, diced
  • 1 small red onion, roughly chopped
  • 1 courgette, diced
  • 250g butternut squash, diced
  • 1 tbsp olive oil
  • 295g can Batchelors Low Fat Mushroom Condensed Soup
  • 100ml milk
  • 3 tbsp breadcrumbs
  • 50g mature Cheddar cheese, grated
  • large ovenproof dish

How to make it

  1. Preheat oven to 200°C/400°F/Gas 6.
  2. Place the vegetables in a large ovenproof dish and drizzle with the oil.
  3. Roast in the oven for 30 minutes or until the vegetables turn soft and brown around the edges.
  4. Remove from the oven, stir in the soup and milk and top with breadcrumbs and cheese.
  5. Return to the oven for 10-15 minutes or until the topping has browned.

Hints and tips

  • Delicious served with fresh crusty bread.
  • For a change top the vegetable mixture with some creamy mashed potatoes.

  • Really nice, thought it had a lot of flavour especially with breadcrumbs and cheese on top. Would have it again and recommend it,also a good dish if your vegetarian.
