For a delicious vegetarian supper combine some cooked Mediterranean style vegetables with Batchelors Vegetable Condensed Soup and layer. Top with a sprinkling of parmesan cheese and bake until bubbling and golden brown. Great for using up any leftover veg.

Serves 4

What you need

  • 1tbsp olive oil
  • 1 red onion, diced
  • 2 courgettes, roughly diced
  • 1 red pepper, chopped
  • 295g can Batchelors Classic Vegetable Condensed Soup
  • 400g can chopped tomatoes
  • 6-8 lasagne sheets
  • tub white sauce, shop bought
  • parmesan cheese, grated
  • non-stick frying pan
  • lasagne dish, lightly greased

How to make it

  1. Preheat oven to 200°C/400°F/Gas 6.
  2. Fry the onion in the oil for about 5 minutes until soft, add the courgettes and red pepper then continue to fry for 2 minutes.
  3. Stir in the soup and chopped tomatoes, simmer gently for 10 minutes.
  4. Layer up the lasagne starting with a layer of pasta then vegetable sauce and white sauce then repeat finishing with a layer of white sauce.
  5. Sprinkle over some parmesan cheese and bake in the oven for 35 minutes or until the topping is golden and the sauce is piping hot.

Hints and tips

  • Delicious served with a fresh green salad.
  • For variety add some roasted vegetables to the soup such as peppers, sweet potato and aubergine.

  • Really nice. I made the white sauce myself as think it's a waste of money to buy a bit of milk, flour, butter and cheese at the shop?! also used vegetable stock instead of soup and worked just as well x
