Coronation Chicken with Apricots

For a simple twist on chicken curry add some Homepride Curry Sauce to cooked diced chicken with a dash of mango chutney, dried apricots and sultanas.
Serves 4
What you need
- 1tbsp olive oil
- 4 chicken breasts, diced
- 1 jar Homepride Curry Sauce
- 1 tbsp mango chutney
- handful of dried apricots halved
- handful of sultanas
- non-stick pan
How to make it
- Heat the oil in a pan and add the chicken, brown on all sides.
- Add the Homepride Curry Sauce bring to the boil and then simmer gently for 20 minutes or until the chicken is cooked through.
- Add mango chutney, apricots and sultanas and cook for further 5 minutes. Serve with some freshly steamed or boiled rice.
Hints and tips
- Try using lamb instead of chicken.
- For a cold coronation sauce just add the sauce to cooked chicken and then add the remaining ingredients. It is a fabulous filling for jacket potatoes or wraps.
