For a satisfying lunch idea try adding OXO Vegetable Stock Cubes to sautéed onion, potatoes and broccoli, add some hot water and seasoning and finish off with some grated cheese for a creamy and delicious soup.
Serves 4
What you need
- 1tbsp olive oil
- 6 medium sized potatoes, peeled and diced
- 1 head of broccoli, roughly chopped
- 1 large onion, diced
- 2 OXO Vegetable Stock Cubes
- ground black pepper
- a handful of grated cheddar cheese
- 1 saucepan with lid
How to make it
- Heat the oil in the saucepan and add the onions and cook gently for 5 minutes until the onion is soft.
- Add the potatoes and cook for a further 5 minutes.
- Place the broccoli in the pan with a litre of boiling water then crumble in the OXO Vegetable Stock Cubes.
- Bring the soup to the boil and then cover with lid and simmer for 20 minutes or until the potatoes are cooked.
- Season with black pepper and then stir through the cheese until melted.
Hints and tips
- This soup is delicious when blended and served as a pureed soup.
- You can try using a stronger blue cheese such as Stilton for a really fantastic flavour.
