Hot Apricot & Almond Winter Trifle

Try layering the base of an ovenproof dish with sponge fingers and top with Apricot Jam, cover with apricot halves and pour over some Ambrosia Ready to Serve Custard. Bake and finish off with a sprinkling of almond flakes for a delicious warming winter trifle!

Serves 6

What you need:

  • 12 sponge fingers
  • 4 tbsp apricot Jam
  • 1 can of apricot halves
  • 500g Ambrosia Ready to Serve Custard
  • Demerara sugar
  • 2tbsp flaked almonds, toasted
  • ovenproof dish

via Asda, Sainsbury's,
Tesco and Ocado

How to make it:

  1. Preheat oven to 190°C/ 375°F/ Gas 5.
  2. Place the sponge fingers into the base of an ovenproof dish and then spread over a layer of apricot jam.
  3. Cover the sponge fingers with apricots and pour custard evenly over the fruit.
  4. Sprinkle with sugar then bake for 25 – 30 minutes or until the custard is hot and the topping is browned.
  5. To serve sprinkle over some toasted flaked almonds.

Hints and tips:

  • This recipe is also delicious using peaches or pears.
