Baked Potato with Red Cabbage

Bake a potato, cut open and add cheese and Haywards Red Cabbage for a tasty twist to the baked favourite.

Serves 1

What you need

  • 1 baking potato
  • cheddar cheese, grated
  • 1 tbsp Haywards Red Cabbage
  • baking tray

How to make it

  1. Bake a potato in either a hot oven or microwave.
  2. When cooked allow to cool slightly then scoop out the cooked potato and place in a mixing bowl.
  3. Add the Haywards Red Cabbage and cheese and mash together.
  4. Place mixture back into potato skin then place on a baking tray and return to the oven oven until the filling is hot and the cheese is bubbling.

Hints and tips

  • Try adding spring onion to the potato mixture for extra colour and flavour.
  • Serve with a green salad as a light lunch idea.
