For a fantastic way to use up leftovers place some cooked diced chicken and Sharwood’s Thai Green Curry Cook-In Sauce into a casserole dish and top with buttered filo pastry, bake in oven until the pastry golden.

Serves 4

What you need

  • 450g cooked diced chicken
  • 1 jar Sharwood’s Thai Green Curry Cook-In Sauce
  • 25g butter, melted
  • 4 sheets filo Pastry
  • casserole dish

How to make it

  1. Preheat the oven to 190ºC/375°F/ Gas 5.
  2. Place the chicken into the base of a casserole dish and then pour the Sharwood’s Thai Green Curry Cook-In Sauce over the top.
  3. Lightly brush one side of each filo sheet with butter then tear the pastry roughly into 4 strips and loosely fold or drape over chicken filling, continuing until all filling is covered.
  4. Bake in the oven for about 25 minutes until pastry golden and filling bubbling.

Hints and tips

  • This recipe is also delicious using left over salmon or turkey and you can add in any vegetables too.
  • This works with standard shortcrust pastry too
