Crispy Potato Wedges

For deliciously crispy potato wedges, crumble an Oxo Chicken Cube over potatoes before oven roasting.

Serves 4

What you need

  • 4 medium potatoes, peeled and washed
  • 2 tbsp vegetable oil
  • 1 Oxo Chicken Cube
  • saucepan
  • roasting tin, lightly oiled

How to make it

  1. Preheat the oven to 200ºC/400ºF/gas mark 6.
  2. Cut the potatoes into wedges and place into a pan of boiling water then simmer gently for 5 minutes until the potatoes slightly softened.
  3. Drain the potatoes and shake gently in the saucepan to roughen the surface of the potatoes.
  4. Tip the potato wedges into an oiled roasting tin and drizzle more oil over them so they are evenly coated then crumble an Oxo chicken cube over and toss the wedges so that they are well coated.
  5. Place in the oven for about 40 minutes, turning once during cooking, so that the potatoes are evenly brown and crispy.

Hints and tips

  • Serve with sour cream or chilli dip.
  • The skins can be left on the potatoes is you prefer.
