For a fabulous Christmas trifle layer some sponge fingers with raspberry jam and fresh raspberries, sprinkle over some sherry and then add a Hartley’s Raspberry Jelly, custard and cream. Top it all off with some fresh raspberries and toasted almonds for a truly special Christmas dessert.

Serves 6

What you need

  • 2 tbsp raspberry jam
  • 10 trifle sponge fingers
  • 150g fresh raspberries, reserve 6 for decoration
  • 2 tbsp sweet sherry
  • 1 Hartley’s Raspberry Jelly Tablet
  • 1 can ready to serve custard
  • 150ml whipping cream, lightly whipped
  • 2 tbsp toasted flaked almonds
  • glass dessert bowl

How to make it

  1. Spread raspberry jam over the spoon fingers then place the sponge into the base of a glass bowl in layers with the fresh raspberries.
  2. Sprinkle the sherry over the sponge fingers and leave to soak for five minutes.
  3. Meanwhile make up the Hartley’s Jelly following the pack instructions and allow to cool then pour over the trifle sponges until they are just covered.
  4. Transfer the jelly to the fridge to set.
  5. When the jelly is set spread a layer of custard over and then top with the whipped cream.
  6. Decorate with the reserved raspberries and toasted almonds then return to the fridge and chill for at least 30 minutes prior to serving.

Hints and tips

  • Dust with a little icing sugar for an extra special touch.
  • If you have any jelly left you could make some small jellies which are great served with fruit for any younger guests.
