To make some delicious rocky road treats just melt chocolate and butter over a pan of hot water then add mini marshmallows, crushed biscuits and crushed honeycomb chocolate. To complete layer the mixture with your favourite Hartley’s Jam and leave to set in the fridge.

Serves 10

What you need

  • 200g milk chocolate
  • 200g plain chocolate
  • 150g unsalted butter
  • 150g mini marshmallows
  • 150g digestive biscuits, crushed roughly
  • 75g honeycomb chocolate bar, chopped roughly
  • 4 tbsp of your favourite Hartley’s Jam, such as Blackcurrant, Raspberry or Red Cherry
  • 18cm square cake tin

How to make it

  1. Grease and line an 18cm square cake tin with clingfilm.
  2. Melt the chocolate and butter together in a bowl over a pan of boiling water and mix well then set aside to cool for 10 minutes.
  3. Add all of the remaining ingredients except the Hartley’s jam and mix together gently with a spatula.
  4. Layer one third of the mixture into the tin then dot the surface with half the jam, repeat the layers ending with the last third of mixture.
  5. Chill for at least 2 hours or ideally overnight, then cut into bite sized chunks.

Hints and tips

  • This recipe makes enough for 20-24 bite sized pieces which can be stored in an airtight container in the fridge for a couple of days.
