For a warming winter vegetable broth just sauté some vegetables in a pan with some vegetable oil then add hot water, Oxo vegetable cubes and a handful of small pasta shells. Simmer gently until the vegetables are cooked and then season with black pepper.

Serves 4

What you need

  • 1tbsp vegetable oil
  • 2 onions, chopped
  • 2 sticks of celery, chopped
  • 1 large leek, sliced finely
  • 2 large potatoes, peeled and diced
  • 2 sweet potatoes, peeled and diced
  • 1 litre hot water
  • 2 Oxo Vegetable cubes
  • handful of small pasta shells
  • black pepper
  • large saucepan with lid

How to make it

  1. Heat the vegetable oil in a large saucepan then add the onion, celery and leek and sauté for 5 minutes.
  2. Add the potatoes, sweet potato and water to the saucepan then crumble in the 2 Oxo vegetable cubes and bring up to the boil.
  3. Reduce the heat and simmer, partially covered, for 15 minutes then add the pasta and continue to cook for 10- 12 minutes until the small pasta shells are cooked.
  4. Season to taste with black pepper then ladle into warm bowls.

Hints and tips

  • Try adding some ground ginger and chilli flakes for a spicy vegetable soup.
