For a speedy supper idea using left-over Christmas turkey just marinate some cooked turkey with Sharwood’s Mild Curry Powder then sauté some garlic and red chillies, add the turkey and heat through. To complete the dish just add cooked cous cous, sultanas and cinnamon for a delicious family meal.

Serves 4

What you need

  • 300g cooked left-over turkey, cut into chunks
  • 1 tbsp Sharwood’s Mild Curry powder
  • 300g cous cous
  • 50g sultanas
  • 500ml boiling water or chicken stock
  • 1tbsp vegetable oil
  • 2 cloves garlic, crushed
  • 1 red chilli
  • 1tsp ground cinnamon
  • salt and ground black pepper
  • 2 bowls
  • 1 large frying pan

How to make it

  1. Place some cooked turkey in a bowl and sprinkle over the Sharwood’s mild curry powder. Leave in the fridge until required.
  2. Place the cous cous and sultanas in a bowl and pour over the boiling water or chicken stock. Mix well and then cover and leave for 5 minutes.
  3. Heat the oil in a pan and add the garlic and chillies then gently fry for about 2 minutes.
  4. Add the turkey to the pan with the cinnamon and heat gently for about 5 minutes until the turkey is piping hot.
  5. Stir the cous cous through the turkey mixture and continue to heat for about 2 minutes, until piping hot.
  6. Season with salt and black pepper before serving.

Hints and tips

  • For variety try adding some chopped mint, coriander, toasted pine nuts and pomegranate.
