For a delicious custard tart just fill a ready-made pastry case with a mixture of custard, eggs, lemon juice and Frank Cooper’s Fine Cut marmalade and bake in the oven until the filling is set.
Serves 6
What you need
- 1 carton of custard
- 2 eggs, beaten
- 2 tbsp lemon juice
- 1 tbsp Frank Cooper’s Fine Cut marmalade
- 1 sweet pastry case, shop bought or home-made
- 1 baking tray
How to make it
- Preheat the oven to 180ºC/350ºF/gas 4.
- In a bowl mix together custard, eggs, lemon juice and marmalade.
- Place the pastry case on a baking tray and pour in the custard mixture.
- Bake for 30-40 minutes or until the custard filling is set.
Hints and tips
- Serve hot or cold with a little cream.
- Try sprinkling some nutmeg or mixed spice over the custard filling before cooking.
