For a delicious custard tart just fill a ready-made pastry case with a mixture of custard, eggs, lemon juice and Frank Cooper’s Fine Cut marmalade and bake in the oven until the filling is set.

Serves 6

What you need

  • 1 carton of custard
  • 2 eggs, beaten
  • 2 tbsp lemon juice
  • 1 tbsp Frank Cooper’s Fine Cut marmalade
  • 1 sweet pastry case, shop bought or home-made
  • 1 baking tray

How to make it

  1. Preheat the oven to 180ºC/350ºF/gas 4.
  2. In a bowl mix together custard, eggs, lemon juice and marmalade.
  3. Place the pastry case on a baking tray and pour in the custard mixture.
  4. Bake for 30-40 minutes or until the custard filling is set.

Hints and tips

  • Serve hot or cold with a little cream.
  • Try sprinkling some nutmeg or mixed spice over the custard filling before cooking.
