Raspberry Jelly layered with fresh raspberries, cream and raspberry sauce produces a simple yet elegant dessert idea.
Serves 4
What you need
- Hartley’s raspberry jelly, tablet or sugar free
- fresh or frozen raspberries
- 1tbsp icing sugar
- fresh extra thick double cream
- 4 wine glasses
How to make it
- Make up the Hartley’s jelly according to the pack instructions.
- Divide half of the raspberries between 4 wine glasses then pour the jelly over the fruit and transfer to the fridge until the jelly is set.
- Mash the remaining raspberries and icing sugar with a fork then pass through a sieve to produce a smooth sauce.
- To complete serve the jellies with a spoonful of raspberry sauce and a dollop of cream.
Hints and tips
- Instead of cream try serving with some crème fraîche topped with fresh raspberries.
