Chocolate and Nut Refrigerator Cake

To make a simple yet indulgent chocolate and nut refrigerator cake melt chocolate and butter, stir in some Sun-pat peanut butter, golden syrup, broken digestive biscuits and dried fruits of your choice. Press into a tin and set in the fridge.
Serves 8
What you need
- 350g chocolate, plain or milk, broken into pieces
- 150g butter
- 2 tbsp Sun-Pat peanut butter
- 175g digestive biscuits, crushed
- 1 tbsp golden syrup
- 300g mixed dried fruits
- 18cm square cake tin/ Clingfilm
How to make it
- Lightly grease a tin then line it with Clingfilm.
- Melt the chocolate and butter in a large bowl resting over a pan of hot water then add the remaining ingredients and mix well.
- Spoon the mixture into the tin and then place in the fridge for at least 6 hours or overnight.
- Remove the tin from the fridge and cut into slices before serving.
Hints and tips
- For a really interesting flavour add some dried cranberries or sour cherries.
