Individual Peanut Cheesecake Bites

For a new and tasty canapé or buffet idea mix together some cream cheese, Sun-Pat peanut butter and a pinch of cinnamon then roll into balls and coat in coconut.
Serves 8
What you need
- 200g cream cheese
- 4 tbsp Sun-Pat peanut butter, crunchy or smooth
- pinch of cinnamon
- toasted desiccated coconut, for coating
- blender
How to make it
- Combine cream cheese, Sun-Pat peanut butter and a pinch of cinnamon in a blender or in a bowl by hand.
- Transfer the mixture to the fridge and chill for at least 30 minutes or until it is firm enough to handle.
- Divide the mixture and shape into balls about the size of walnuts then roll each ball in desiccated coconut to coat.
Hints and tips
- Chopped peanuts make a great alternative coating.
- Great served on cocktail sticks as canapés.
