Creamy Mushrooms with Boiled Rice

This is a delicious and easy to make dish just sauté some onions and sliced mushrooms in a little olive oil then add sweetcorn, Batchelors Condensed Cream of Mushroom Soup, milk and seasoning then simmer gently to produce a tasty sauce.
Serves 4
What you need
- 1 tbsp olive oil
- 1 large onion, finely diced
- 250g mushrooms, washed and sliced
- 1 small can sweetcorn, drained
- 1 can Batchelors Condensed Soup, Cream of Mushroom
- 100ml milk or water
- salt and black pepper
- 4 portions of long grain rice, cooked as directed on the pack instructions
- non-stick frying pan
How to make it
- Heat the oil in a frying pan and add the onions then sauté for 5 minutes over a gentle heat until the onions soften.
- Add the mushrooms to the pan and continue to cook for a further 5 minutes then stir in the sweetcorn.
- Pour the Batchelors Condensed Soup and milk or water over the mushroom mixture, season with salt and black pepper then simmer gently for 10 minutes.
- Serve the creamy mushrooms with a portion of boiled rice.
Hints and tips
- For added colour and texture garnish this delicious supper dish with some fresh rocket.
- Try adding some cooked green lentils to the sauce to provide added protein to this supper dish.
