For a quick and easy supper dish just place some cooked chicken and broccoli into an ovenproof dish, top with a mixture of Batchelors Condensed Chicken soup, sour cream, spring onions and curry powder. To complete the dish sprinkle with breadcrumbs and grated cheese then bake until golden.

Serves 5

What you need

  • 1 whole cooked chicken
  • 1 medium tub of soured cream
  • 1 can of Batchelors Condensed Chicken soup
  • 2-3 spring onions, chopped finely
  • 2-3 tsp of curry powder (I use a mild Indian curry powder)
  • broccoli, cooked and drained
  • 2 slices of bread, grated into breadcrumbs (preferably bread that’s a few days old)
  • cheese to sprinkle on top
  • boiled rice
  • large ovenproof dish

How to make it

  1. Preheat the oven to 180°C/350°F/Gas 4
  2. Chop the chicken into bite sized pieces then spread evenly into a large ovenproof dish.
  3. Place the sour cream and Batchelors Condensed Chicken soup into a bowl along with the spring onions and curry powder. This is your sauce and you can have it as hot or as mild as you like.
  4. Top the chicken with the cooked broccoli then spread the sauce mix over and sprinkle over the breadcrumbs and cheese.
  5. Put in the oven for about 20-25 minutes until the cheese is a lightly golden brown and breadcrumbs are crispy.
  6. Serve with boiled rice.

Hints and tips

  • I find it best to steam the broccoli and put the water on for the rice before I do anything else. Once that’s on, it’s just a case of preparing the sauce mixture and assembling your dish.

  • very similar to the one I make. I don't use spring onions but will next time! I also squeeze a bit of lemon into the sauce and add a dollop of mayo too. I tastes so much better than ingredients suggest. promise...
