Custard Fairy Cakes

I made this

Make a slightly thicker Bird’s Custard using less milk, and spoon on top of fairy cakes instead of butter icing for fabulous fairy cakes. Pop some jam underneath for a tasty surprise.

Serves 4

What you need:

  • Bird’s Custard Powder
  • sugar
  • milk
  • ready made fairy cakes
  • strawberry or raspberry jam

via Asda, Sainsbury's,
Tesco and Ocado

How to make it:

  1. Make up the Bird’s custard as directed using ? of the milk specified.
  2. Allow the custard to cool, then transfer to the fridge for 30 minutes and the custard should be thick and creamy.
  3. Take some ready made fairy cakes and spread a teaspoonful of jam over each one.
  4. Top each fairy cake with a good serving of cold custard.

Hints and tips:

  • Before placing the custard into the fridge, cover with a damp piece of cling film and this will prevent a skin from forming.
  • For an extra special treat top the fairy cakes with a glace cherry or some sugar strands.

Comments

  • For the benefit of this American reader, what is a fairy cake? From the picture it looks like what we call a cupcake - a butter cake batter baked in a paper baking cup. This idea sounds scrumptious! And indeed would likely be less caloric than a traditional frosting or icing made of confectioner's sugar and butter (oops, I think you call it icing sugar in the UK).
