Use up left over chorizo sausage by blending it then mixing with a packet of Paxo Sage & Onion Stuffing Mix. It makes a fantastic spicy stuffing to have with roast chicken.

Serves 4

What you need

  • 1 packet of Paxo Sage & Onion Stuffing Mix
  • 50 gms of cooked Chorizo sausage or any spicy sausage
  • oil
  • ovenproof dish

How to make it

  1. Preheat the oven to 200°C/400°F/Gas 6
  2. Make up the Sage & Onion Stuffing Mix as directed on the pack instructions and leave it to stand.
  3. Take the skin off the chorizo sausage, chop roughly then place into a blender and blitz until the meat is smooth. Stir the blended chorizo into the Stuffing mix then place into a lightly oiled ovenproof dish.
  4. Bake in the oven for 20-25 minutes.

Hints and tips

  • Serve with roast chicken and some roasted spanish style vegetables such as peppers, red onions and courgettes.
