Simple Scrummy Diabetic Fruit Cake

I made this

This delicious fruit cake recipe is so easy to make with only 3 ingredients! Just soak some dried fruit in orange juice then add some McDougalls Self Raising flour, pop into a cake tin and bake on a low heat.

Serves 10

What you need:

  • 1kg of dried mixed fruit
  • 500ml of pure orange juice
  • 2 cups of Mcdougalls Self Raising Flour
  • 25-30cm (10-12 inch) square cake tin, greased and lined

via Asda, Sainsbury's,
Tesco and Ocado

How to make it:

  1. Place the mixed dried fruit into a large bowl and pour over the orange juice.
  2. Stir and leave to soak for at least 3 to 4 hours or overnight.
  3. Tip the McDougalls Self Raising Flour into the dried fruit and orange juice then give it all a real good mix.
  4. Scoop the mixture into the prepared cake tin and bake in centre of the oven at 140°C/275°F/Gas 1 for about 2 hours. Check with a skewer and if it comes out clean, then the cake will be ready.
  5. Allow to cool in the tin for at least 30 minutes then turn out and slice.

Hints and tips:

  • For extra flavour try adding mixed spice with the flour
  • or substitute some of the orange juice with brandy.
  • This gorgeous fruit cake recipe freezes really well once sliced.

  • I've just had my first Hb1Ac test since trying this recipe - and am shocked! As my Doctor has pointed out, this recipe is about 50% sugar. It is a good, simple recipe but I cannot have my blood-glucose level - which has been well under control for many years - suddenly jump like this.

  • I've made several half-quantity versions of this recipe and it is, indeed, a tasty fruit cake - but my cake doesn't look at all like your photograph. Your sliced cake looks to be about 30% fruit and 70% other, mine looks to be about 90% fruit. Now the cake slices hold together so there is some "other" - but what am I doing wrong? I'm using exact half-quantities, but the same cooking time and temperature in a fan-assisted oven.

  • Grablof of Dagenham: As a diabetic, yes it is suitable. Like everything in a diabetics diet, you eat according to your blood sugar level, besides, if you avoided all foods that have natural sugars - you wouldn't eat lolololol! This cake has no REFINED sugar, is free from added fats and oils and is clearly a far better option nutritionally compared to a run of the mill cake. Oh, and the brandy is a noted variation of this cake - not an essential, that is why it is listed under the 'Hints and Tips' and not the 'What you need' or 'How to make it' sections.

  • What about the Natural SUGARS in the fruit and orange juice, never mind the Brandy, it sounds scrummy, but are you sure it is suitable for diabetics
