Spicy Bacon Pasta

This recipe for penne pasta in a tomato, bacon and chilli sauce is quick and easy to make and the sauce takes as long as the pasta to cook even better it’s made with mostly store cupboard ingredients including Oxo Vegetable Cubes!

Serves 2

What you need:

  • 1 tbsp olive oil
  • 200g smoked streaky bacon, chopped
  • 1 onion, finely chopped
  • 1 garlic clove, peeled and crushed
  • 1 tsp dried basil
  • 1 tsp dried mixed italian herbs
  • ¼ tsp chilli flakes, or to taste
  • ½ tsp ground black pepper
  • 1 tbsp red wine vinegar
  • 200ml vegetable stock made with 1 Oxo Vegetable Cube
  • 400g tin of chopped tomatoes
  • Salt to season
  • 200g dried penne, or other dried pasta of your choice
  • grated cheese & freshly ground black pepper to serve
  • 2 pans

Tesco and Ocado

How to make it:

  1. Heat the oil in a pan over a medium heat and fry the bacon until starting to go crispy.
  2. Add the onion and garlic and fry until soft.
  3. Add the dried herbs, chilli flakes and pepper and stir. Splash in the red wine vinegar (it should sizzle and smell amazing).
  4. Add the stock and the tomatoes and season with a little salt, stir and leave to simmer, uncovered, this should take around 10 minutes to reduce, thicken and become glossy.
  5. Meanwhile, cook the pasta according to packet instructions. Drain and toss with the sauce and serve sprinkled with your favourite cheese and a little more ground pepper.

Hints and tips:

  • Chilli flakes are hot – start with just a pinch of chilli flakes if you don’t like it too spicy!
  • Vary the ingredients according to what you have leftover in your fridge so try making it veggie with any vegetables you have in the fridge such as mushrooms, peppers and courgettes and use your favourite herbs. This recipe is very adaptable according to what is in your cupboard!
