Corned Beef Hash Bake

Try making this tasty and quick supper dish by frying some onions then adding corned beef, a Beef Oxo Cube and some sweetcorn then top with mashed potato and bake in the oven until the potato is golden.
Serves 4
What you need
- 2 tbsp oil
- 1 large onion, finely chopped
- 1 large can corned beef, diced
- 1 Beef Oxo Cube
- 1 can of sweetcorn
- 150ml water
- 400g mashed potato, homemade or shop bought
- ovenproof dish
How to make it
- Preheat the oven to 190°C/375°F/Gas 5.
- Heat the oil in a pan and fry the onion over a low heat for about 10 minutes until soft.
- Add the corned beef, crumbled Beef Oxo Cube, sweetcorn and water to the frying pan then simmer for 10 minutes.
- Transfer the mixture to an ovenproof dish then cover with the mashed potato.
- Transfer to the oven for 25-30 minutes until the potatoes are golden.
Hints and tips
- Add some diced swede to make the meal go further.
- Mix some grated cheese with the mashed potato prior to topping the corned beef hash.
