Spicy Thai Chicken and Peanut Curry

A warm and filling Thai curry that is quick and perfect with jasmine rice. Just cook some diced chicken breast then add lots of vegetables, red Thai paste, coconut milk and Sun-Pat Peanut Butter then simmer gently until the chicken is cooked through.
Serves 8
What you need
- 1 tbsp oil
- 1kg Chicken breast, diced
- 6 spring onions, sliced
- 1-2 red chillies, deseeded and chopped
- 100g baby corn, sliced
- 220g jar of Thai Red curry paste
- 400ml can of coconut milk
- 1 tbsp sugar
- 3 heaped tablespoons of Sun- pat peanut butter
- 100g peanuts
- 100g mangetout
- large non-stick pan
How to make it
- Heat the oil in a pan then gently fry the chicken breast.
- After about 5 minutes add the spring onions, chilli’s and baby corn and continue cooking for 10 minutes or until the chicken is cooked through.
- Add the jar of Thai red curry paste, coconut milk, sugar and Sun-Pat Peanut Butter and stir well then simmer gently for 5 minutes.
- Finally add the peanuts and mangetout and simmer for a further 5 minutes.
- Serve with basmati or jasmine rice.
Hints and tips
- Try using prawns or lamb in this recipe for a change.
- If you prefer a vegetarian option just omit the chicken and add extra vegetables.
