Easy Potato and Leek Soup

To make a classic winter warming soup fry off some leeks, add garlic puree, diced potatoes, hot water and an Oxo Vegetable Cube. When the soup is cooked add some fresh cream for a really tasty soup idea.
Serves 3
What you need
- 2 tbs margarine
- 2 medium sized leeks, washed and finely chopped
- 2 medium sized potatoes, peeled and cubed
- garlic puree
- 800ml hot water
- 1 Oxo Vegetable Cube
- small pot of single cream
- salt and pepper to season
- saucepan
How to make it
- Melt the margarine in a pan, add the leeks and cook gently for 5 minutes until the leeks soften.
- Stir in 1-2 teaspoons of garlic puree and blend with the leeks.
- Add the potatoes and continue to cook for a further 5 minutes.
- Pour the hot water into the pan and then add a crumbled Oxo Vegetable Cube.
- Bring the soup to the boil and then simmer gently for 15-20 minutes or until the potatoes are cooked.
- Add single cream to desired taste before serving and season with salt and pepper.
Hints and tips
- For thicker soup try using appoximately 600ml vegetable stock instead of 800ml.
- Do not add the cream if you wish to freeze this soup the cream is best added once the soup is re-heated.
