Tasty Carrot and Coriander Soup

Here is a simple soup that anyone can make and enjoy just by frying some onions, carrots and ground coriander then add water and an Oxo Vegetable cube. When cooked blitz, with a stick blender for a tasty smooth soup.
Serves 4
What you need
- 1 tbsp of olive oil
- 1 onion, diced
- 750g carrots, peeled and finely sliced
- 1tsp of ground coriander
- 1.2 litres of water
- 1 Oxo Vegetable Cube
- 2 tbs chopped fresh coriander to garnish
- 1 large pan with lid
- electric stick blender
How to make it
- Heat the oil in a pan and then add the onions and heat gently for 5 minutes until soft and translucent.
- Add the carrots and cook for 5 minutes then add the ground coriander stir well and cook for a further 3 minutes.
- Pour the water into the pan then crumble in the Oxo Vegetable Cube.
- Bring the soup to the boil, reduce the heat and simmer with the lid on for about 10 minutes or until carrots are soft.
- Using a stick blender, blitz the soup until smooth.
- Garnish with some freshly chopped coriander before serving.
Hints and tips
- The stalks from the coriander can be finely chopped and added to the soup with the stock for extra flavour.
