Coronation Style Chicken Sandwich

Enjoy a Coronation style sandwich in a couple of easy steps by combining cooked chicken with mayonnaise and natural yogurt, flavoured with Sharwood’s Mango Chutney and curry paste.

Serves 1

What you need:

  • 1 tbsp low fat mayonnaise
  • 1 tbsp low fat natural yogurt
  • 1 tsp sharwood’s Mango Chutney
  • 1 tsp tikka curry paste
  • 50g diced cooked chicken, pre-packed or from leftovers
  • 2 slices of wholemeal bread
  • shredded lettuce

via Asda, Sainsbury's,
Tesco and Ocado

How to make it:

  1. Place the mayonnaise, natural yogurt, Sharwood’s Mango Chutney and curry paste to a small bowl and mix well.
  2. Add the chicken and stir until it is fully coated in the coronation sauce.
  3. Place the filling on one side of the bread and then top with some shredded lettuce and the second slice of bread. Cut in half and serve

Hints and tips:

  • This filling is also perfect for wraps, pitta breads and baked potatoes.

Comments

  • This made for very nice coronation chicken; tastes much better and is very economic to buying the ready made stuff in the supermarkets. I suggest you could also have it on baked potatoes or with salads as well as the alternatives already listed above.
