Liven up your toasted egg sandwich with some Branston Tomato & Red Pepper Relish and add oomph to your morning!

Serves 1

What you need

  • 1 tomato, diced
  • 1 tbsp Branston Tomato & Red Pepper Relish
  • 1 egg
  • 1 slice of bread, lightly toasted
  • oil
  • non-stick frying pan

How to make it

  1. In a small bowl mix together the diced tomato with a spoonful of Branston Tomato & Red Pepper Relish.
  2. Meanwhile fry an egg in a lightly oiled pan then place on top of some toasted bread.
  3. Pile the diced tomato mixture on top of the egg and serve immediately.

Hints and tips

  • For a healthier alternative replace the fried egg with a poached or scrambled egg.

  • I like this idea and intend trying it for breakfast, but I will replace the oil with Fry Light so I can still have my fried egg, which I like a lot. I tend to eat healthy and low fat menus when I can.
