For a lovely hot trifle for any occasion, a real treat for the kids just place some sliced Swiss roll into an lightly greased ovenproof dish, top with sliced peaches and hot Ambrosia custard. To finish whip up some egg whites and caster sugar, spread over the custard and bake in a moderate oven until golden.
Serves 4
What you need
- 1 jam Swiss roll,
- 1 can Ambrosia Custard,
- 1 can peach slices in fruit juice, drained
- 3 egg whites,
- 6 tbsp caster sugar
- ovenproof dish, lightly greased
How to make it
- Preheat oven to 180ºC/350ºF/gas mark 4.
- Slice the Swiss roll into thick slices and lay around the bottom and halfway up the sides of an oven proof dish.
- Arrange the peaches on top of the Swiss roll.
- Warm up the Ambrosia Custard as directed and pour over the peaches.
- In a clean bowl make the meringue by whisking together the egg whites and caster sugar until stiff.
- Spread the mixture over the custard and cook in the oven for about 15 -20 minutes until the topping is golden brown and crunchy.
Hints and tips
- Try using fresh fruit such as strawberries or raspberries.
- For a change use a chocolate Swiss roll.
