Mix together cooked chicken, mushrooms, sweetcorn and Batchelors Cream of Chicken Condensed Soup for a great jacket potato filling.

Serves 4

What you need

  • 1 tbsp oil
  • 3 chicken breasts, diced
  • 1 can Batchelors Cream of Chicken Condensed Soup
  • 1 tbsp cornflour mixed with 3tbsp milk
  • 4 mushrooms, chopped
  • small can sweetcorn, drained
  • 4 baking potatoes, cooked
  • side salad
  • large frying pan

How to make it

  1. Heat the oil in a pan, add the chicken and cook for 10 minutes until cooked through.
  2. Pour the Batchelors Cream of Chicken Condensed Soup into the pan then thicken with cornflour and milk.
  3. Add the chopped mushrooms and sweetcorn.
  4. Scoop the potato out of skins and mix with the chicken mixture.
  5. Place the potato mixture back in skins and brown under grill then serve with a side salad.

Hints and tips

  • Great for using leftover chicken or turkey.
  • Try replacing the sweetcorn with peas or broccoli

  • This recipe is great. I do a similar one to yours. I use cheese sauce mix instead of Chicken Condensed Soup. I put the cooked diced chicken into the cold milk (half a pint, as per the instructiosn on the back of the packet of sauce mix) and cheese sauce mix and heat gentley. By the time the cheese sauce mix has come to the boil the cooked chicken has heated through. I then pour onto cooked jacket potatoes and sprinkle with grated cheese.
