Peanut Butter Sponge Cake

Try using Sun-Pat Peanut Butter as a filling for a sponge cake. Makes a change from jam and cream.
Serves 6
What you need
- 225g self raising flour
- 4 medium eggs
- 225g caster sugar
- 225g butter, softened
- 2 tbsp Smooth Sun-Pat Peanut Butter
- 2 round 18cm cake tins, greased
How to make it
- Preheat the oven to 180°C/350°F/Gas 4.
- Sift the flour into a mixing bowl then make a hole in middle of the flour, add the eggs and sugar then fold together using a spatula.
- Add the butter and whisk together.
- Divide the mixture between the cake tins and bake in a preheated oven for 20-25 minutes or until golden and well risen.
- Remove the cakes from the oven and allow to cool before removing from the tins.
- Once cool remove the first cake and place on plate or cake tray then spread the Sun-Pat Peanut Butter evenly over the first cake and place the second cake on top.

- Great served with banana and cream.
