This Mediterranean couscous is full of lots of different flavours that will have you coming back for more. If you like olives, feta cheese, artichokes and spices this is the dish for you.

Serves 4

What you need

  • 1 Vegetable Oxo Cube
  • 200ml hot water
  • 200g couscous
  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 1 clove garlic, crushed
  • 1 tsp turmeric
  • 1 tsp paprika
  • small can chopped tomatoes
  • feta cheese, cut into small chunks
  • jar of red peppers, finely chopped
  • 10 olives any colour, chopped roughly
  • small jar artichokes in oil, roughly chopped
  • salt and freshly ground black pepper
  • fresh basil
  • non-stick frying pan

How to make it

  1. Crumble an Oxo Vegetable Cube into a jug, add 200ml of boiling water and mix well.
  2. Place the couscous into a shallow bowl, then pour over the hot Oxo stock then cover the bowl with cling film and leave for 5 minutes until the couscous has swelled up and absorbed all of the water. Ruffle with a fork to separate the grains.
  3. Heat the olive oil in a pan, add the onion and garlic then fry gently for 5 minutes.
  4. Add the turmeric and paprika and continue to cook for a minute then add the can of chopped tomatoes and continue to simmer for 5 minutes.
  5. Stir the tomato mixture through the couscous along with the feta cheese, red peppers, olives and artichokes.
  6. Season the couscous with salt and pepper and garnish with fresh basil leaves.

Hints and tips

  • You can buy ready flavoured couscous and simply add the stock and the vegetables.
  • Try using garlic paste instead of using fresh garlic for quickness.
