Here is an easy method of making cheesecake using jelly. Just make a base with crushed biscuit and melted margarine then prepare the filling by combining cream cheese, cream and a Hartley’s jelly. Pour into a tin then leave to set.
Serves 10
What you need
- 250g of digestive biscuits
- 50g margarine
- 1 packet of Hartley’s Strawberry Jelly
- 140g of creamed cheese
- 150ml cream
- 23cm loose bottomed cake tin
How to make it
- To make the base, crush the digestive biscuits until they are in even and fine bits.
- Melt the margarine over a low heat or in microwave and add to the crushed biscuits and mix well.
- Press the mixture into a loose bottomed cake tin and place in fridge.
- For the filling make up the Hartley’s Jelly as instructed on packet but do not let it set.
- Whisk together the cream cheese and cream and add the jelly to the mixture and blend together well.
- Pour the filling onto biscuit base and place in fridge until it is firm and set.
Hints and tips
- You can add the juice of a lemon and lemon rind if desired. Any flavour jelly can be used, my favourite is raspberry.
