Giant Yorkhire puds filled with cottage pie provides an easy after school meal. Just fry off some mince, add frozen vegetables and Oxo Beef Cubes. Then fill Yorkshire puddings with the mince and top with mashed potato.

Serves 4

What you need

  • 300g lean beef mince
  • 1tbsp oil
  • 1 small pkt mixed frozen vegetables
  • 500ml beef stock, made with 2 Beef Oxo Cubes
  • 350g mashed potatoes, homemade or ready bought
  • 4 medium frozen Yorkshire puddings
  • frying pan

How to make it

  1. Fry mince in oil and when brown add the frozen vegetables.
  2. Pour the Oxo stock into the pan, cover leave to simmer for 15 minutes.
  3. Heat the Yorkshire puddings in the oven as directed on the pack instructions.
  4. To complete fill each Yorkshire pudding with mince then top with mashed potatoes.

Hints and tips

  • For a vegetarian option you can use OXO Vegetable Cubes and veggie mince.
