This is a great fun recipe for your own Whoopie Pies with Angel Delight for the filling.
Serves 7
What you need
- 1 sachet Angel Delight, strawberry or raspberry flavour
- 100g caster sugar
- 100g softened butter
- 2 eggs, lightly beaten
- 2 tbsp soured cream
- 225g self raising flour
- ½ tsp baking powder
- 4 tbsp dessicated coconut
- icing sugar to dust
- 2 baking sheets, lightly greased
How to make it
- Preheat the oven to 180°C/350°F/Gas 4
- Make up the Angel Delight as per instructions and chill in the fridge.
- Beat the sugar and butter until smooth and gradually add
- in the eggs and then the sour cream.
- In a different bowl stir together the flour, baking powder and coconut then stir into the butter mixture.
- Drop 14 large spoonfuls of the mixture onto the baking sheets and spread them into 7cm circles.
- Bake until firm to touch, then remove and allow to cool.
- Sandwich two sponges together with Angel Delight, repeat with remaining sponges and dust with icing sugar to serve.
Hints and tips
- You could try this with chocolate chips in the mixture and chocolate Angel Delight for the filling
