Ratatouille Pasta Layer

For a quick and easy Mediterranean style dish with plenty of tasty vegetables just make up a simple ratatouille and a sachet of Batchelors Cheese and Broccoli Pasta ‘n’ Sauce then layer in an ovenproof dish and top with grated cheese and breadcrumbs before baking in the oven.
Serves 4
What you need
- drizzle of oil
- 1 small aubergine, diced
- 1 courgette, sliced
- 1 red or yellow pepper, sliced
- 4 tomatoes, diced
- salt and black pepper
- 1 sachet of Batchelors Cheese and Broccoli Pasta ‘n’ Sauce
- grated cheese
- handful breadcrumbs
- ovenproof dish
How to make it
- Preheat the oven to 190°C/375°F/Gas 5
- To make up the ratatouille heat the oil in a pan, add the aubergine, courgettes and pepper then gently fry for 5 minutes.
- Add the tomatoes, season with salt and black pepper and simmer gently for 10 minutes until the vegetables are soft.
- Meanwhile make up a sachet of Batchelors Cheese and Broccoli Pasta ‘n’ sauce as instructed on pack.
- Layer the pasta and ratatouille mixture in an ovenproof dish then sprinkle over some grated cheese and breadcrumbs.
- Bake in a moderate oven for 25 minutes until piping hot.
Hints and tips
- For a Mediterranean style topping use grated mozzarella cheese instead of cheddar cheese.
